well it ain’t Costa Rica….

So the hubs turned 39 yesterday. 39! That’s one year less than 40. But strangely,  I no longer feel that is old. I remember when I met Ryan I couldn’t imagine being in my 40’s…I couldn’t imagine having kids, but look at what happened there. And Ryan, being my complete opposite, imagined being  old. Old -Old, like in his 90’s….”What the hell…” I would think, “how or why do you imagine that?”  Now look at us, here we are and though 90’s isn’t something I want to imagine currently, I can imagine 60’s and  70’s…wrinkle-free, skinnier, not gray, rich….That’s how I imagine it too. Anyway, I digress…

Birthdays are so hard for us, as are Christmas’. Because we buy what we want 365 days a year. We don’t think, I’ll put that on my wish list for Christmas or Birthday, unless its botox…just saying…So, trying to be original,I think what to do for Ryan and what to buy…I thought about a window unit for the garage, aka man-cave, aka cigar smoking room.  But then I remember our electric bill last July…$490.00, ( I can still hear my string of curse words,  scream and Ryan’s later as he looked at it…it wasn’t a pretty moment…) So I am sure a window unit will add to that. So I nixed it. Then I thought about more trendy clothes, since he was not the trendiest, but has improved greatly…The ecko t-shirt collection is slowly diminishing…But we are running out of closet room…I was going to buy him new True Religion sandals, but his last pair I bought still look brand new…not to mention he has plenty of shoes…for a guy. So I suck, I bought cigars. They always make him happy, and deep down it’s the only thing that I can spend hundreds on and him not complain about the present in the end….

But I also planned a surprise birthday dinner for him at the Japanese Steakhouse. He loves it there. I love the noodles…and we had a great time and I was soooo full afterward. Sooo full….


We had Lou…He does tricks and jokes…It’s a show…Remember that episode in Friends where Ross was at a restaurant like this and the chef tossed him a bite in the air and Ross caught it in his mouth but screamed, “Hot!” Lou used to do that. Ryan is a pro at catching stuff with his mouth. I am an epic failure at it. I can’t do popcorn or m&m’s and its frustrating.  And I always get nervous when we go and I think, “crap, I am going to be the only one who misses, as usual.”  Last time it went down the front of my shirt and it was hot. Cleavage burn is not good..But this time he didn’t do it and Ryan was a little disappointed. I, however, was so relieved!!!

Monday we took him a birthday cake to his work. I couldn’t find 39 candles to light it,  so it was a candle-less cake…unlike this card he got, which grossed us all out…Including Cameron.

Cameron has thrown it in the trash at least 5 times now and each time Maddy digs it out and screams,”Arghhhh,  this is dad’s birthday card! Don’t throw it away!!!” …uh, what are we gonna do with it, frame it? Its going in the trash, and this time Maddy isn’t digging it out…and if he does, then its going on his nightstand…

I was going to  make him a big shrimp boil for dinner with crab cakes but he opted for Casey’s pizza instead…Yay, I didn’t have to cook, but Casey’s pizza, really? So one large Canadian bacon (gag) pizza coming up and a small Taco one for me.

Now let me digress a little more here….Since Carrie’s birthday party and nacho bar at the party, I have been on a mexican food kick. Its unhealthy, I don’t know whats wrong with me…Every day I was in Enid, I drove through Taco Mayo and got two tacos. I came home and we had mexican that next day, and the day after and the day after…Since then, we have taco or taco salad at least twice a week. Ryan is sick of mexican food. I am inhaling it. I eat it for lunch, as a matter of fact had two Taco Gringo tacos for lunch today.

I even search for recipes…I will tell you these Cilantro roasted potatoes are to die for. I think I am a decent cook. But Ryan flat-out said this is the best thing I have ever cooked and to keep it coming…Really? Roasted potatoes are the best thing I have ever made? Is it because they are supposed to be a little burnt, and not the accidental burnt I am prone to doing? I dunno. But rock on, I love them too and so we now eat these potatoes at least twice a week and Maddy loves them too. Score one for momma…

Here is the recipe if you want to try!

Garlic Roasted Potatoes with Cilantro and Lemon
 2 tablespoons chopped garlic
 1 tablespoon extra virgin olive oil
 1 1/2 pounds small red skin potatoes, quartered
 1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped Cilantro
1/2 teaspoon grated lemon rind

 1.Preheat oven to 475 degrees and prepare baking sheet by lining it with aluminum foil coated in cooking spray.
 2.Combine garlic and olive oil in a small saucepan over medium heat. Cook for 2 minutes or until golden brown, stirring frequently. Remove garlic with a slotted spoon and set aside in a bowl.
 3.Place quartered potatoes in a large bowl and drizzle garlic oil over them. Toss to coat the potatoes.
 4.Arrange potatoes on prepared baking sheet and sprinkle with salt and pepper.
 5.Bake for 30 minutes or until golden brown; toss halfway through cook time. Remove from oven and place into serving dish.
 6.Combine reserved garlic, Cilantro, and lemon rind. Sprinkle mixture evenly over potatoes. Season with salt and pepper (to taste).

I use like 3 or 4 garlic cloves…And I don’t measure the cilantro…I usually use one bunch from the store, or 3/4 of it…I use a whole lemon rind as well. Can you tell I don’t like to measure…

I also made this recipe for Cilantro Lime Chicken with avocado salsa.  It was yummo. It was delicioso!! We have made it twice now and will be a regular…Gotta find the recipe link though…

 I guess I am on a cilantro kick but thank god the farmer’s market is now open because I can get three times the amount of locally grown cilantro,  for the same price at the local grocery store, and it will taste so much better. Oh how I love the summer time…

So last night, as you know from my previous blog, we went to Orange Leaf…He was not impressed, the kids loved it. Cameron’s shirt was clean and Clorox white, and afterward, well let’s just say I am going to have to Clorox and pray those stains come out. Now Maddy, bless his heart, is just like his momma. He loves his ice cream. He doesn’t like change…He doesn’t like funky flavors, most of the time. One time, Ryan was taking us to Culvers and told Maddy to be adventurous and order the craziest, wackiest ice cream ever. He told him you can have any flavor of toppings you want. And Maddy is a vanilla lover. It’s always a vanilla shake request at Sonic or McDonald’s.  Or it’s a vanilla cone or if he is feeling a little crazy, a twist cone. When we went to Culver’s he took a walk on the wild side and ordered a vanilla sundae with strawberry topping and a cherry. That’s my kid. He knows what he likes and doesn’t want to stray!

I was trying to get a picture of Cameron's insanely stained shirt but got this pic instead, and my kids have no clue how to just pose like a regular person.

Orange Leaf is right next door to a Mexican restaurant…and unbelievably, after inhaling my ice cream, I walked out and smelled the aromas coming from the restaurant and thought, mmmm, Mexican…Their outdoor had a patio that was chained up and Maddy showed me how ice cream makes him strong, see him trying to break the chain…I didn’t tell him ice cream just makes you chubby.  I just said, “almost maddy, almost!”

I'm thinking Mexican on the patio sounds perfect right about now...

    I so love reading about your family. It is wonderful and you are so great at describing every little detail. I wish I could write like that. It sounds like you have an absolutely wonderful family Bahar. I am so very happy for you. And your children are just gorgeous. I really wish I knew you better. But I think I will enjoy your blog and learning more about you and your family. Love and Kisses!

    Remember when Ryno took me to Shoguns and I caught that shrimp in my mouth…..good times.
    Well if you came to visit me, we could eat Mesican (no typo there) every day at my very favoritest place Cafe Garcia. We could dine al fresco and have margaritas and then go across the street to Pastimes and have more. I’m so glad you’re closing the store Bahar-we all missed you:)
